Easiest Pineapple Cake

Sweet Thing made this cake recently and I told her not to make it anymore, I will just eat it piece by piece until it is all gone, and it doesn’t take very long to get gone either! Try it for yourself, I think you will agree it is easy and delicious.


  • There is no butter or oil in the cake

  • 2 cups all-purpose flour

  • 2 cups white sugar

  • 1 1/2 teaspoons baking soda

  • 1/4 teaspoon salt

  • 2 eggs, beaten

  • 1 (20 ounce) can crushed pineapple, with juice

  • 1 teaspoon vanilla extract

  • 1 cup chopped pecans or  mixed nuts


  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9×13 inch baking pan.

  2. In a medium bowl, stir together the flour, sugar, baking soda and salt. Add the eggs, pineapple and vanilla, mix until well blended. Add the nuts and pour into the prepared pan.

  3. Bake for 30 to 35 minutes in the preheated oven, until a toothpick inserted comes out clean.

4. After baking, while the cake is still warm cover with canned cream cheese frosting.

Slice and enjoy!
